Food Handler Requirements Vary by State

There is no single nationwide food handler law — each state (and sometimes each county or city) sets its own rules. Some states require every food worker to get a food handler card within a set number of days of being hired; others leave it up to the employer or local health department.

What to check for your state

  • Is a food handler card required? Many states (California, Texas, Arizona, Illinois, and others) require one; some do not.
  • How soon after hire? Some states give you as little as 14–30 days to get certified.
  • Which training is accepted? States approve specific providers; check that your course is accepted where you work.
  • How long is it valid? Most cards last 2–3 years before you must renew.
