ServSafe Food Handler Test Answers Explained
Not an answer key to memorise — the reasoning behind the answers that are tested most often, so you can work out any version of the question.
Why an Answer Key Will Not Help You
Every provider randomises its questions from a bank of several hundred, so no two candidates see quite the same exam. A list of answers copied from someone else’s attempt is worthless. What does transfer is the reasoning, because the rules behind the questions come from the FDA Food Code and do not change between versions.
Below are the answers that appear most often, each with the reason it is correct. Learn the reason and you can answer any rewording of the same question.
The Temperature Answers
| Question | Answer | Why |
|---|---|---|
| What is the danger zone? | 41°F to 135°F | Bacteria multiply fastest here, quickest of all between 70°F and 125°F. |
| Chicken cooking temperature? | 165°F | Poultry carries Salmonella throughout, so it needs the highest minimum. |
| Ground beef temperature? | 155°F for 17 seconds | Grinding spreads surface bacteria through the whole product. |
| Steak or fish temperature? | 145°F for 15 seconds | Contamination stays on the surface of an intact cut, so less is needed. |
| Reheating leftovers? | 165°F within 2 hours | The food has already been through the danger zone once. |
| Cooling, first stage? | 135°F to 70°F in 2 hours | This is the fastest-growth band, so it gets the tightest limit. |
| Cooling, total time? | 6 hours to reach 41°F | Two hours for stage one, four more for stage two. |
The Hygiene Answers
| Question | Answer | Why |
|---|---|---|
| How long to wash hands? | 20 seconds total | Including 10 to 15 seconds of scrubbing, at water of at least 100°F. |
| When to change gloves? | Torn, soiled, task change, or 4 hours | Gloves are not a substitute for handwashing. |
| Can I touch ready-to-eat food? | No bare-hand contact | Use gloves, tongs, deli paper or a utensil. |
| Which jewellery is allowed? | A plain band ring only | Stones and links trap food and bacteria. |
| When must I be excluded? | Jaundice, or vomiting and diarrhoea | These indicate a pathogen transmissible through food. |
The Contamination Answers
| Question | Answer | Why |
|---|---|---|
| Where does raw chicken go? | Bottom shelf | Highest cooking temperature goes lowest, so drips cannot reach anything below. |
| What are the Big 6? | Salmonella Typhi, nontyphoidal Salmonella, Shigella, STEC E. coli, Hepatitis A, Norovirus | These are highly infectious and must be reported. |
| How many major allergens? | Nine | Milk, eggs, fish, shellfish, tree nuts, peanuts, wheat, soy and sesame. |
| Clean or sanitise first? | Clean, then sanitise | Sanitiser cannot work through food soil. |
| Which thawing method is wrong? | On the counter | The four safe methods are cooler, running water, microwave, or during cooking. |
The Three Mistakes That Fail People
Confusing 155 and 165. Ground meat is 155°F. Poultry and anything reheated is 165°F. If you remember only one pair of numbers, make it this one.
Halving the cooling rule. People remember six hours and forget that the first two must reach 70°F. If that stage is missed you must reheat to 165°F and start again, or discard the food. You cannot simply carry on cooling.
Misreading the question. A large share of wrong answers are on material the candidate knew. Words like minimum, maximum, NOT and except reverse the correct choice, and they appear throughout the exam. Read every question twice.
