ServSafe Manager Practice Test
200 comprehensive questions for ServSafe Manager certification prep
About the Food Manager Practice Test
The food protection manager certification is designed for supervisors and managers responsible for food safety in a kitchen. It is more advanced than the food handler test — the real exam typically has 90 questions and requires a passing score of about 75%. This free practice test helps you prepare for that higher bar.
What's on the manager exam?
- Active managerial control and creating a food safety culture
- HACCP and the seven HACCP principles
- FAT TOM — the six conditions bacteria need to grow
- Cooking, holding, cooling, and reheating temperatures
- Cleaning, sanitizing, and pest management
- Employee health policies and the “Big 6” pathogens
How to pass the manager test
- Know the exact temperatures and time limits cold (since managers are tested on specifics).
- Understand HACCP as a system, not just a definition.
- Practice until you score consistently above 80% on full 90-question sets.
ServSafe Manager Practice Test: What the CFPM Exam Involves
The ServSafe Manager exam, which leads to Certified Food Protection Manager status, is a different order of difficulty from the food handler assessment. It is 90 questions, of which 80 are scored and 10 are unscored pilot questions, with a two-hour limit and a 70 percent pass mark — 56 of the 80 scored questions.
Manager vs Food Handler
| Food Handler | Manager (CFPM) | |
|---|---|---|
| Questions | 40 | 90 (80 scored) |
| Pass mark | 75% | 70% |
| Time limit | Usually untimed | 2 hours |
| Proctor required | No | Yes |
| Typical validity | 2 to 3 years | 5 years |
| Depth | Recall of rules | Applying rules to scenarios |
What Makes It Harder
Food handler questions mostly ask what a rule is. Manager questions ask what you would do. A typical item describes a situation — a cooler running at 50°F overnight, a delivery arriving with a torn package, a cook returning after a bout of vomiting — and asks for the correct action. You need the underlying rule and the judgement to apply it.
Areas Weighted Most Heavily
Expect substantial coverage of HACCP and its seven principles, active managerial control, the employee health policy and when exclusion versus restriction applies, facility and equipment requirements, pest management, and staff training responsibilities. Time and temperature control still features throughout, but at manager level it appears inside scenarios rather than as direct recall.
